It is like cilantro in that it is a cool-season quick grower that rapidly goes to seed (bolts). Chervil is an annual that can grow 2 feet tall and 1 foot wide. Chervil has had various uses in folk medicine, most famously as a way to aid digestion. Chervil is more delicate than parsley and brings in hints of licorice and anise. The delicately flavored fines herbes are used to season salads, sauces, and soups and are added last minute to dishes featuring poultry, seafood, eggs, and young spring vegetables.
